Rice

 

Rice is the seed of the monocot plants Oryza sativa. As a cereal grain, it is the most important staple food for a large part of the world's human population, especially in Asia and the Arica. It is the grain with the second-highest worldwide production, after maize (corn).

 

Classification

 

Brown rice (or "hulled rice") is unmilled or partly milled rice, a kind of whole, natural grain. It has a mild nutty flavor, is chewier and more nutritious than white rice, but goes rancid more quickly because the germ—which is removed to make white rice—contains fats that can spoil.[1]

 

White rice is the name given to milled rice that has had its husk, bran, and germ removed. This alters the flavour, texture and appearance of the rice and helps prevent spoilage and extend its storage life. After milling, the rice is polished, resulting in a seed with a bright, white, shiny appearance.

 

Parboiled rice is rice that has been partially boiled in the husk. The three basic steps of parboiling are soaking, steaming and drying. These steps also make rice easier to process by hand, boost its nutritional profile (other than its vitamin-B content which is denatured) and change its texture. About 50% of the world’s paddy production is parboiled. The treatment is practiced in many parts of the world such as Pakistan, India, Bangladesh, , Myanmar, Malaysia, Sri Lanka, Guinea, South Africa, Italy, Spain, Thailand, Switzerland, USA and France.

 

Basmati Rice

 

Basmati Rice, a variety of long grain rice with a fine texture, is the world's best rice that one can use for cooking and the leading aromatic fine quality rice in the world trade. Basmati rice means the "queen of fragrance" or the perfumed one. This type of rice has been grown in the foothills of the Himalayas for thousands of years. In Pakistan, Basmati rice is characterized by extra long, superfine slender grains having a length to breadth ratio of more than 3.5, sweet taste, soft texture, delicate curvature and an extra elongation with least breadth-wise swelling on cooking. This highly aromatic rice is India's gift to the whole world.

 

Basmati is a variety of long grain rice grown in Pakistan and notable for its fragrance and delicate, nuanced flavour. Its name means "the fragrant one" in Sanskrit. Pakistan is one of the largest cultivator, consumer and exporter of this rice; it is primarily grown through paddy field farming in the Punjab region.

 

The grains of basmati rice are longer than most other types of rice. Cooked grains of Basmati rice are characteristically free flowing rather than sticky, unlike most other kinds of long-grain rice. Cooked basmati rice can be uniquely identified by its fragrance. In addition to normal (white) Basmati rice, brown basmati is available, although uncommon.
